Vegan Green Muffins Recipe – Perfect for St. Patrick’s Day
These muffins are super tasty, moist, and bright GREEN because they are loaded with spinach! They are perfect for St. Patrick’s Day and kids will love them!
Ingredients for Muffins
- 2 ½ cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 4 cups baby spinach
- ¾ cup maple syrup
- ½ cup coconut milk
- 3 large bananas
- ½ cup vegetable oil
Ingredients for Frosting
- ½ cup chilled coconut oil
- 1 cup baby spinach
- 1 tablespoon maple syrup
- 1 ½ cups confectioners’ sugar
Preheat the oven to 350 degrees. Line 18 muffin tins with paper liners.
Sift the flour, baking powder, baking soda, and salt together in a large bowl. Stir with your hand to be sure the ingredients are combined.
In a blender, combine the spinach, maple syrup, coconut milk, bananas, and oil and process until completely pureed.
Make a well in the middle of the dry mixture, pour the wet mixture into the well, and stir until well combined.
Using a 2 ¼-inch ice cream scoop, spoon the batter into the muffin cups to fill the liners.
Bake for 18 to 20 minutes, until a toothpick comes out clean.
Cool for 15 minutes, remove from the pans, and allow to cool completely before frosting.
In a blender, combine the spinach and maple syrup and processes until completely pureed.
Place the confectioners’ sugar and coconut oil in the bowl of an electric mixer fitted with a paddle attachment. Mix on medium-low speed until creamy, scraping down the bowl with a spatula as you work. Add the spinach mixture and beat on high speed until the mixture is light and smooth.
