My husband and I never really celebrated Valentine’s Day. I mean, we never really made any restaurant reservations on that day to go out. We would always give each other nice cards and just enjoy a special dinner at home. Ever since the kids came along, I have tried to decorate the house a bit, and come up with new Valentine’s Day traditions to make it more fun for them. It’s just so much fun seeing their eyes shine and their smiles widen. I have to admit, I look forward to any holiday now a bit more than normal, just so I can do something fun for my little girls.
The other day (ssshhhtt we did not wait for the Valentine’s Day) my girls and I got a little excited about Valentine’s Day, after buying a few Valentine’s decorations at Michael’s. When we got home, we craved something sweet, so I whisked together a quick chocolate mug dessert that would be perfect for the V-day. It’s easy, fast, and yummy!
1/4 cup almond flour
1/4 cup milk
3 tbs maple syrup
2 tsp cocoa
1 tbs chocolate chips (optional)
In a small bowl, whisk together the almond flour, cocoa, egg, and maple syrup. Add milk a little at a time (to avoid clumps). Add the chocolate chips and pour the mixture into a mug. The cake will double in volume, so be sure to use a mug that has room to rise.
Microwave on high, for about 2-3 minutes. If the cake appears to be too liquid, microwave for additional 30-40 seconds.
