Valentine’s Day Sugar Cookies Made By Kids
My oldest daughter, Kate, was sick this weekend, and she told me that if we made cookies, it would make her feel better. So, guess what? We made cookies 😉
I got this recipe from allrecipes.com. However, because this recipe was for 60 cookies, I used only a quarter of the measurements. I had no doubt that all 60 cookies would have been consumed in a short period of time though. 🙂
Ingredients for Sugar Cookies
6 tbs Butter (softened, not melted)
1/2 cup Sugar
1-1/4 cup Flour
1/2 tsp Baking powder
1/4 tsp Salt
1/4 tsp Vanilla extract
Ingredients for Icing
1 cup Confectioners’ sugar (aka. powdered sugar)
2 tbs Milk
6-8 Slices of raw beet (optional, for coloring)
In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour.
Preheat oven to 350 degrees F. Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with heart cookie cutter. Place cookies 1 inch apart on a baking sheet lined with silicone baking mat.
While the cookies are baking, stir together the confectioners’ sugar and milk until smooth. Use a vegetable peeler to peel 6-8 slices from a raw beet. Place the slices into the bowl and stir until the icing turns pale pink. Add more slices of beet for desired color intensity, then discard the beet slices. Next, decorate your cookies with the icing. You can either dip the cookies into the icing, or transfer the icing to a squeeze bottle, such as Wilton Squeeze Bottles, for mess-free decorating. Note – the beets will not change the flavor of your icing! Allow the icing to air-dry.
