This ground beef butternut squash dish with zucchini pasta is a perfect weeknight meal! If there ever was a healthy pasta dish, I’d say this would be it! It is so delicious that you won’t believe it is also good for you! Even my girls loved it!
2 pounds ground beef
2 tbs olive oil
1 pound butternut squash (peeled and cubed)
1 onion (diced)
2-3 cloves of garlic (minced)
1 tsp thyme
1 – 1/2 tsp salt
1/2 tsp black pepper
2 zucchinis (sliced ribbon-thin)
1/3 cup finely chopped parsley (optional)
1 tbs toasted pumpkin seeds
Heat the oil in a saute pan over medium heat. Add the onions and cook until they begin to brown, about 8 minutes.
Add garlic, thyme, salt, pepper and ground beef and mix well.
Once the ground beef begins to brown, add the butternut squash and lower the heat to medium-low.
Cover with a lid and cook until the butternut squash is cooked through, about 10 minutes.
Turn off the heat and place the zucchini on top and cover the lid. Let it sit for about 5 minutes.
You can use a vegetable peeler or a mandoline slicer to make ribbon-thin zucchini. Take off of the stovetop and sprinkle with parsley and pumpkin seeds.
