Today was a rainy day and I decided to give my fridge some TLC with a top-to-bottom cleaning, I went through all the shelves and drawers and threw out everything that was past its prime. However, after inspecting my herbs and citrus, I realized I had some lemons and rosemary that didn’t look appealing enough to cook with, but didn’t belong in the trash can just yet.
Instead of tossing them out, I decided to use them for a simmer pot to make the house smell amazing. It’s just a super easy way to make your house cozy and, if you ask my husband, I am ALL ABOUT cozy 🙂 It is probably the most overused word in our household! 🙂
2 sliced lemons
2 rosemary strings (cut to fit the pot)
Splash of Vanilla Extract
Place all the ingredients in a medium-to-small size pot and cover with 4 cups of water. Simmer gently on the stove top, topping off with water when needed (every 30 minutes or so).
I can’t wait to experiment with other combinations, like cinnamon, cloves, allspice, grapefruit, cranberries, etc. Wow… this just made me think of fall again! Fall is, by far, my favorite season of all!
